5 Picky Eater - Approved Spring Recipes

Spring is the BEST season! Don’t ya think?

Sunny days and warm weather means lots of time outside with the kiddos. And when it’s beautiful out, who wants to be in the kitchen?!

Not us!

So in the spirit of making life simple and enjoying the sunshine, here are 5 easy peasy recipes that are yummy, healthy, and fun.

Did we mention yummy???

Alright, let’s get this thing started!

Raspberry Banana Breakfast Tacos

We’re kicking the day off right with these Fruity Breakfast “Tacos.” This recipe is perfect for getting our kiddos to, as "The Picky Eater Dietitian" Danielle Zold, RD, CLC  says, play with food! Especially if they’re our “professional taste testers.”

To make your own Raspberry Banana Breakfast Tacos, you’ll be swapping the traditional tortilla for. . . (drumroll) . . .

Pancakes!

And instead of taco filling (meat, lettuce, tomatoes) we’re loading up on yogurt and fresh fruit.

With all those natural probiotics and antioxidants, this recipe checks the boxes as Picky Parent Approved.

One teensy change we’d make — swap out the sugar for monk fruit sweetener!

Mini Pepper Pizzas

Ask any kiddo what their favorite food is, and pizza will definitely make the list. But let’s toss out those microwave pizza bites for something a little more fun.

These Mini Pepper Pizzas use slices of bell pepper for the crust, and let you control the toppings!

But before you knock this one (because let’s face it, bell peppers aren’t popular among the kiddos), remember that your stoplight peppers — orange, red, and yellow — are actually sweet!

Plus, your kiddos will have a blast decorating their mini pizzas. Which is another way to get your little one to play with food and kick that picky eater habit!

Vegan Sloppy Joes

How about a vegan twist on an old classic?

These Vegan Sloppy Joes pack the same flavor as the classic dish, but with the added bonus of being gluten and meat free.

Yup, you heard that right — meat free! So this one’s for all you vegan and vegetarian mommas out there. Or, if you just wanna skip out on the meat this one time.

So, how do you make a sloppy joe vegan?

Well, with a sneaky little ingredient. . . code name: Quinoa.

This delicious grain is known for being healthier and more nutritious than your average grain. And makes the perfect base to soak up all that flavor.

Give it a try, your little one’s might not even know the difference!

Homemade Fish Sticks And Curly Fries

While you’re throwing out those old, freezer burned microwave pizza bites, go ahead and toss the fish sticks too! Because here’s another healthy swap to try out this spring.

These Homemade Fish Sticks are yummier and a whole ton healthier than their over processed counterparts.

But don’t let the word “homemade” scare you off. They’re simple to make and takes less than 40 minutes!

When paired with these Oven Baked Curly Fries and a side of fresh veggies, this is a meal that packs some serious nutrition!

Fruit Smoothies

We top this list of Easy Peasy Recipes with the king (or queen!) of all things healthy, yummy, and simple.

And that’s the Fruit Smoothie.

The best part about smoothies? You can sneak in veggies like spinach without your little one won’t even knowing!
